We had an absolutely amazing weekend in London. Even though we were only in the city from Friday evening until Sunday night, it was totally worth the trip. Plus, it’s only a one-hour flight away!

Our first few days in Amsterdam have been wonderful, but they’re already flying by! The jet lag is finally gone and I’m looking forward to enjoying the weekend. Here are a few things I read this week that you might enjoy.

Isn’t it freakin’ adorable? I’m so in love with this apartment. The decor is perfect, the bed is super cozy, and the location is amazing. We’re in De Pijp, which is a really cool neighborhood in south Amsterdam with bars, restaurants, and shops on every corner.
My favorite part about the apartment is that there’s so much natural light in every room. I don’t even need to turn on any lights until it gets dark, which isn’t until almost 10 p.m. No one has AC in the Netherlands, but the weather has been so nice that I can just open the windows if we need a cool breeze. We’ve also been enjoying sitting on the balcony every day. I don’t know why, but coffee and wine taste way better out there.
It’s too bad this is only a temporary apartment though. We just needed somewhere to stay while we looked for a place for the summer. This apartment is amazing, but too expensive for us to stay here that long. Wish us luck on the search!
I really love to cook. I usually make dinner at least four to five times a week, but things have been a little crazy with our very recent transatlantic move. More updates on that to come later this week! We arrived in Amsterdam on Tuesday morning and I’m definitely still suffering from jet lag.
I’m always on the hunt for new recipes, but I also have a few favorites when I don’t feel like experimenting. These five recipes are my go-to’s and are almost always in our weekly rotation. They’re all healthy, delicious, and quick to make—nobody wants to stand in a kitchen for an hour after a long day of work. I hope you enjoy!
1. Spaghetti Squash Shrimp Pad Thai
This is so good that we ate it every week for a few months after discovering it. Pro Tip: Save time by cooking the squash in the microwave.
2. BBQ Salmon & Crispy Chickpea Salad
The roasted chickpeas are totally worth the extra prep time.
3. Thai Curry Vegetable Soup
You can use whatever vegetables you have on hand for this soup. I recently made this soup with sweet potato, cabbage, and bell peppers and it tasted amazing.
4. Sausage Kale Skillet
This is a great beginner recipe. It’s guaranteed foolproof and delicious.
5. Chicken Lettuce Wraps
These may look fancy, but they’re super easy to make. Pro Tip: Butter lettuce is the best for wraps!
I will try to make most of these meals here in Amsterdam because they are that delicious, but they’ll probably be slightly different versions. Yesterday we walked around the Albert Cuyp Market, the biggest outdoor market in Amsterdam, and the local grocery store, Albert Heijn, and I had to stop myself from buying everything. I can’t wait to share all the amazing food we’re eating here!

A few months ago, Matt’s employer offered him the opportunity to work on a project in Amsterdam, Netherlands. It would be a short-term stay, an estimated four to six months.
Of course, my first question was, “Can I go?”, to which they replied, “Yes, Mrs. Vera, you can.”

Over the last few years, I’ve made a conscious effort to be more thoughtful about the clothing and accessories I buy. Not only does this help getting dressed each day easier and more enjoyable, but it also allows me to spend a little more on fewer quality items.
I was on the hunt for a new purse last year when I discovered Cuyana. This company believes in a “Fewer, better” model, which embraces the minimalist lifestyle so many people are trying to achieve. I know I certainly am. Instead of buying a purse that I’ll only use for a few months and never again, I want a purse that I can wear year-round. I bought this purse in March 2015 and it’s held up so well that I know it will last for years to come.
I don’t think there’s anything wrong with buying the occasional purse from Forever 21 or Target and I can’t promise I won’t do it again in the future. But for now, I’d rather invest in a purse that’s going to hold up beautifully day after day, multitask from day to night to weekend, and look great with every outfit.
